where can i find the most "authentic" tiramisu? I checked numerous online sources and it seems like there isn't ONE TRUE recipe. Rather, there are many basic recipes with or without heavy cream, with raw or cooked eggs, with bailey wine or rum or any coffee liquor with various brands, etc, etc. I wonder what the real flavor should be, before attempting to make variations. Tried a variation today, and it tastes fine but i can't help wondering if it is anything like tiramisu at all....  But a happy surprise is, ladyfinger just by itself tastes much like a kind of small round cookie we used to eat as kids, so that's definitely sth I will keep making, just for its own sake. And btw, much much better than store bought....fresh from the oven, warm and moist, with some coffee, (or, milk for kids, or for certain "big" kids), it's just great.

ok, mine: 1, 2 egg yolks beaten with 2 tsp sugar until light in color, add 160g mascarpone and beat until peaks hold, add coffee liquor and pinch of salt, beat. 2. Beat heavy cream 140g until soft peaks form. Mix the yolk mixture and cream. 3. Use clean bowl and beat 2egg whites with 1 tbs sugar  until stiff peaks form, fold in with the above mixture. 4. dip lady fingers in espresso....done. then layer as usual, dust cocoa as usual. Very simple but with tons of bowls to wash. This version is very very anti-sweet. Sweetness come only from a wee bit of sugar and the coffee liquor. But i think the mascarpone % is way too low....

and btw this is afor a 6' cake with sides and bottom of ladyfingers, but its only 2 layers instead of 3. Total is slightly higher than the pan, so i guess 3.5' tall.ladyfinger recipe is a 2 egg one: 1. beat2 whites with 2tbs sugar until stiff peaks form. 2. whisk 2 yolks with 1.5 tbs sugar just until combined. 3. Mix the two together by gentle fold. 4. sift in 70g cake flour, fold to combine. 5. Bake at 375F for 12min until just turning golden. I love this a lot -- very easy to make, and really really tasty

i feel it's only soso, not as strong as i remembered, how much alcohol did u use?

我用的杂牌酒,可能是这个问题。另外这个酒要放几多?我觉得我的放的也很少

我记得我是放了1个大匙。做的大概6人份的。
